Caramel Flan (for 20 cups)


Ingredients:
Eggs
Evaporated milk
Caramel
Sugar
Salt
Cold water
Hot water

Instructions:
Mix the evaporated milk with 1-3/4 cup hot water, 1-3/4 cup cold water, some sugar and salt
Poach it about 3~5 minutes
Crack 10 eggs and add them into the warm evaporated milk

Mix a cup of caramel with a cup of cold water and 4 spoons of hot water
Boil it until the caramel become black-brown and add some hot water ( it is better if you use the stainless steel pot)
Wait about 1~2 minutes, and don’t stir
Put the caramel at the bottom of cups and add the egg milk above it

Arrange the cups in a single layer on a baking sheet. Don’t forget to add some water to the baking sheet to avoid scorching.
Heat them up in a 325 F kitchen oven for about 30 ~40 minutes
